Cookies & Prayers

There is no better feeling than receiving a package in the mail as a college student, and today was my lucky day. As I opened the door and picked up the box with my name on it I freaked out and ran inside to see who sent me something! 

I first read the letter that was on the top when I opened the box. My church Lake Forest, that I have grown up going to and still attend when I am home, sent me the package! I quickly looked inside the box and immediately started drooling…..COOKIES!!!!!

Not just any kind of cookies though, I’m talking about homemade cookies! You can not beat that.

What is even more special about these treats is that they were made by people from the church who are praying specifically for me and all the other college students that attend Lake Forest. The letter sent with the package expressed how even though we may be away, we are still apart of the church and are always being prayed for.

Pastor Mike also gave advice on growing spiritually in college and his experience when he was in school.

Receiving this gift has really made me feel loved and blessed to have people thinking and praying for me.

My roommates and I have tried a few cookies and they taste amazing! Lake Forest really knows how to bake :). I plan on keeping all these goodies in the kitchen to share with others so that I don’t eat them all myself….because they really do taste that good!

Banana Flax seed Crackers

What do you do with a ton of flaxseeds and a banana your about to toss out….

You make Banana Flax seed Crackers of course!

I found this idea on Taralynn Mcnitts blog.

I was very Leery about this recipe, but they turned out so good!

Mash up 1 banana and add 1/2 cup of flax seeds. Mix well together and drop about a spoon full for each cracker on a baking sheet.

Bake at 300 degrees for 25 minutes…your kitchen will smell like banana bread 🙂

And I’m serious when I say they really do taste like banana bread.

These crackers are so healthy and full of fiber to fill you up. I think I’m going to keep some in my purse to take tailgating at the football game tomorrow!

Mexican Night!

Fiesta! Yep that’s right…last night my roommate and I cooked a Mexican style dinner for a few friends! 

It was no ordinary Wednesday night, and we had fun doing something different.

This is what we had to work with:

Our friends dog didn’t find us very amusing….

Our Mexican dinner turned out great! I mean who doesn’t love homemade guacamole?

Fresh salad. Baked barbecue chicken and black bean rice.

I left off the Queso cheese that went on top of the chicken. It tasted just as good without it.

I wonder what our next themed dinner night will be!

Finally Went Grocery Shopping

Before I talk about anything, I felt I must share my roommates cupcakes she made last night. They had caramel melted on top and in the middle. Yum. I had a piece of one….delicious. I could have easily eaten 3…. or 10. 

I stayed strong and walked away from the cupcakes and beat the temptation.

Now On To Todays Grocery Shopping. It was either I go to the store or eat oatmeal…again… for dinner because that’s all I had in the pantry.

I literally had NO food in the house and so I set out to the good old Publix to get the essentials.

This Weeks Food Essentials:

  • Quaker Oatmeal (low sugar)
  • Baby spinach + 2 different kinds of dressing (So I don’t get tired of the same old salad)
  • Bananas
  • Apple Slices  (easy to grab for a snack)
  • Carrots and Hummus
  • Whole Wheat Bread
  • Low Sodium Turkey and low-fat swiss cheese
  • Fat Free Light CAROTT CAKE Yogurt!!!!!!!!! (I can’t wait to try this!)
  • Asparagus and Frozen Corn
  • Milk

Grocery shopping can be easy or stressful. I stay away from the Snackity aisles and the “always tempting” ice-cream section. I have found it extremely helpful to go in knowing exactly what I’m getting, so I don’t have a reason to go down the junk food aisle. Don’t be embarrassed to make a list!

Now that I actually have food, I was able to make a healthy and lite lunch.

Half sandwich with Turkey, tomato, lettuce and low fat swiss cheese. Vegetable Terra Chips on the side!

What essential foods do you keep in your house at all times?


Thank Goodness It’s Friday! 

Before class today I didn’t have many options for breakfast. I need to go grocery shopping, but at least there were some eggs in the fridge.

I just put together some scrambled eggs, mozzarella cheese and pepper, and ran out the door. Eggs have a good amount of protein to start the day off right.

While walking through campus I usually stop by Starbucks to get an ice coffee, but feeling dehydrated this morning I opted for something different. Coconut Water!

I was pretty excited about trying it out….to bad it tasted terrible. I couldn’t drink it. It left a horrible taste in my mouth…yuck. Maybe should have picked a coconut water with a flavor.

Arriving home after class I got pretty productive. I cooked the rest of my frozen chicken, so I will have dinner for the next few days, and got ahead by researching articles for my dreaded research class.

I am very excited about tonights plans though! MK who was an instructor last year is visiting from grad school, and Michelle, another instructor, just got home from Europe! A big group of us are going to Tsunami (also known as the best SUSHI place ever) to celebrate all of us finally being together again. I am very blessed to have these friends who share the same passion as me to live a healthy and fit lifestyle.

Surrounding yourself with people who support you and your goals is encouraging and keeps you feeling and thinking positively!

Staying Motivated

Staying motivated and focused on eating right and staying active can be difficult. I have heard so many people say they can’t find ways to stay on track, so I thought I would share a few ways I am staying motivated right now.

To stay focused this Fall semester I have decided to sign up for 2 5K runs…..but not just any run. I signed up for the craziest run on Earth!

I checked online about..well everyday…for when registrations opened.

The Color Run visits all different cities in America and you have to sign up quick before it gets booked up.

I jumped up and down and did a little happy dance when I found out I got in and get to be part of the run!

-The first Color Run is in October, I am doing that run with my friends here at the University! We are in the process of coming up with a team name.

-The 2nd Color Run is in November which I will be doing with my dad in Charlotte. How great is my dad for doing this with me!

Try and find something that will keep you excited and focused so you can reach your goal!

After walking past the rock wall in my gym so many times I have decided I have to attempt to climb it before I graduate.

This wall is HUGE…and right smack dab in the middle of the gym (Aka. where everyone in the entire gym can stare at you attempting to get up this thing)

Obviously I am scared to try this…ahhh.

Climbing this wall would be a whole different way to challenge my body and muscles.

I am focused to stay on track so that I can reach my goal and climb this INTIMIDATING rock wall!

What ways do you stay motivated and focused to keep eating right and exercising? 

Classes Have Started!

Yesterday was the first day of classes and also different compared to previous semesters.

After having been in a sorority for the past two years I have decided to focus more on my major, broadcast journalism, and not be in the sorority this year.  It was a difficult decision and has been a new experience. Walking around campus I saw all the girls in their “rush” t-shirts, it’s a very exciting time for Greek life right now. I’m lucky to have formed so many friendships though in those first two years and thankfully still have all my close friends. A few of them are even in some of my classes!

So many people everywhere! Thank goodness I left the house early because the Starbucks line took 20 minutes….I know…CRAZY.

I wish I could have taken a picture of my Sociology teacher for you. She was very entertaining and loved talking about reality TV…Right up my alley!

After my 3 back to back classes I headed home to make myself lunch.

I made a half toasted sandwich with: ham,tomato,avocado, swiss cheese and lettuce. With a banana on the side. After lunch I began to prepare for teaching my first cardio class of the semester, YAY!

Having a 7pm exercise class is not ideal because lets face it…on Thursday nights, or should I say Thirsty Thursdays, most college students are focused on getting ready for the night of drinking.

I knew this going into the class, and reminded myself that it doesn’t matter how many people are there, it is my responsibility to give each individual the best workout they deserve. I was proud to instruct the few people that did show up because I knew they were dedicated to staying healthy and active, and they were fun to teach!

Now heading to the grocery store to figure out what to cook for dinner. If I make something good I’ll let you know 😉

No More Sleeping In

Tomorrow is the first day of classes which means no more sleeping in. I have to get my butt out of bed and into class!

I am honestly very excited about this new semester starting because I love being on a schedule, I’m going to get back into a rhythm!

This morning I grabbed a banana and ran out the door to meet up with a few Body Pumpers at the gym. We are getting in as much practice teaching this release before we teach it for the participants. The lunge track is killer, and since I didn’t do much BP over the summer I’m gonna be very…very sore. So right when I got home I pulled out the protein powder!

  • Peanut Butter- Vanilla Protein Shake

I put together a cup of milk, scoop of powdered peanut butter, and half scoop of Vanilla Whey Protein powder. Put it in a blender with a few ice cubes and it came out great. Easy to do and has a lot of protein to help restore your muscles….and it taste awesome.

Now back to memorizing all this choreography and getting things ready for tomorrow!

Mud Run Challenge

One way I stay motivated to  keep exercising and to stay  in shape is to sign up for different runs. Setting dates is always a good way to keep your mind on track.

When a friend of mine heard about the USMC Ultimate Challenge Mud Run… she said “we should totally do this… it would be a great challenge”.  This is when my inner competitive  side lashed out.

I read online about all the different obstacles throughout the course….and thats when I realized I may be in over my head.

The four of us attempted to train for this crazy marine challenge… to bad we didn’t have a huge mud pit with a rope to swing over or logs to throw our bodies under and over for practice.

Just notice how happy, and clean we are when we started.

Now look how much fun we are having….Clearly this Marine had it out for me. Things only got crazier.

These things were so high up and I don’t know how many we had to climb over!

Who wants a HUG?! This mud pit took forever to get through, it was so thick and gross!

But after running up and down sand hills, climbing over logs and having to do pushups whenever the Marines were around, We finally finished in one piece!


This Mud Run was the most intense challenge I have ever done but I felt so accomplished and proud of myself for finishing it. The crazy part is we actually came is 15th place out of all the girl teams that day! We definitely celebrated our victory that night!


We can’t wait for the next Marine Mud Run Challenge!

What to do with QUINOA!

After hearing so much hype on the supper grain Quinoa…I still can’t get over why it’s spelled that way….I decided to jump on the band wagon and give it a try. Not having a clue what to make with it I turned over to the good old google search and found this recipe. Thank you Allrecipes.com for this delicious quinoa salad!

Cranberry and Cilantro Quinoa

I enjoyed this with pita chips, making it a yummy snack!

After realizing how good this super food tasted, I decided to go back to google and look up the health benefits, and after reading I went ahead and took another bite 😉

  1. Major Protein- Quinoa has more protein content than wheat, barley or other major grains. One cup of quinoa has 9 grams, which trumps the protein-rich egg(6 grams). Quinoa, which contains all 8 of the essential amino acids, is a complete protein.
  2. Rich in Fiber- Quinoa keeps you full and satisfied for a longer time period.
  3. Cleansing- As a complex carbohydrate, quinoa acts an internal cleanser , easing the progress of food through the digestive tract. Say no to bloat!
  4. Brain Food- Quinoa’s vitamin B content can help keep the mind sharp, maintain brain volume and stabilize mood!

Ok so Here’s the Ingredients:

  • 1 1/2 cups water
  • 1 cup uncooked quinoa, rinsed
  • 1/3 cup red bell pepper, chopped
  • 1/3 cup yellow bell pepper, chopped
  • 1 small red onion, finely chopped
  • 1 1/2 teaspoons curry powder
  • 1/4 cup chopped fresh cilantro
  • 1/3 cup lime juice or you can juice 1 lime
  • 1/4 cup toasted sliced almonds
  • 1/3 cup minced carrots
  • 1/2 cup dried cranberries
  • salt and ground black pepper to taste
  1. Pour the water into a saucepan, and cover with a lid. Bring to a boil over high heat, then pour in the quinoa, recover, and continue to simmer over low heat until the water has been absorbed, 15 to 20 minutes. Scrape into a mixing bowl, and chill in the refrigerator until cold.
  2. Once cold, stir in the red bell pepper, yellow bell pepper, red onion, curry powder, cilantro, lime juice, sliced almonds, carrots, and cranberries. Season to taste with salt and pepper. Chill before serving.
